Cheesy Spinach Stuffed Shells RECIPE 1/16/11


I've had this recipe for a while now and never had the chance to try it. So before I got all sick, I made this and it was a hit in our home. The kids loved it, my little one even said he wanted it everyday for dinner. This recipe is for a 13x9 pan, but I know we won't eat the whole entire thing. So, I made it in a 9x9 square pan and made 2 dishes. I saved the other one and wrapped it really good for the freezer, so I can make it some other time.


My husband who's not a big fan of spinach even ate it and he didn't mind. He said it was good.

RECIPE

What you need:

  • 1 container (16 oz.) Cottage Cheese
  • 1 container (15 oz) Ricotta Cheese
  • 1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
  • 1 cup Shredded Mozzarella Cheese, divided
  • 1/4 cup Grated Parmesan Cheese
  • 1 tsp. Italian seasoning
  • Jumbo pasta shells, cooked, drained
  • 2 jar (26 oz.) spaghetti sauce
  • 1 large tomato, chopped (optional)
Instruction:

  1. HEAT oven to 400°F. Mix cottage cheese, ricotta cheese, spinach, 1/2 cup mozzarella, Parmesan and seasoning; spoon into shells.
  2. MIX the sauce and tomatoes; spoon half into your baking dish then add filled shellson top and cover with sauce.
  3. BAKE 25 min. or until heated through. Top with remaining mozzarella; bake, uncovered, 2 min. or until melted.

One Year Anniversary on my blog - GIVEAWAY 1/13/11

Cupcake Pop Mold 1/6/11


This is not a review for this product and I bought this for my personal use. I wanted to try it and see if it's easier than just using the flower cutter from wilton.

I made about 2 dozen just to see how it would look. The cake pop is much bigger in size with the mold and I wasn't really feeling it. Maybe I need to grow into using the cupcake pop mold. I also bought 4 which was stupid, since I only used 1 the entire time I made the cake pops. Anyway, It's ok to use and it's super easy, but I prefer the way I used to make it, with the flower cutter.

Peanut Butter Brownie Layer Recipe 1/1/11


Happy New Year everyone!!! This year I opted to not have a resolution, so then I won't be breaking any. I just promised myself to eat cautiously and not eat too much. I've been making way too much resolutions over the years and even before the week ends I have broken it already, so none this year.


Anyhoo! I've made this really yummy yummy and rich dessert a couple of days ago, when we had our friends over. Mel said, next time I make this, I have to have vanilla ice cream 'coz it will go great with it. The kids loved it with ice cold milk.

I just wanted to share the recipe with you guys.

What you need

1 box 21 oz. brownie mix, that fits a 13x9-inch pan size
1 cup cold milk
1 small box Vanilla Flavor Instant Pudding
1 cup creamy peanut butter
1/2 cup powdered sugar
1-1/2 cups COOL WHIP Whipped Topping (use frozen not thawed)
3 squares Baker's Semi-Sweet Chocolate
1/2 cup Dry Roasted Peanuts, coarsely chopped (optional)

PREPARE and bake brownies in 13x9-inch pan as directed on package and then cool.

WHILE cooling, beat milk and pudding mix with whisk for couple of minutes, then add peanut butter and sugar; mix well. You can refrigerate until brownies are completely cooled. Spread well over brownies.

MICROWAVE frozen cool whip and chocolate on HIGH 1 min., stirring every 30 sec. Spread over pudding and top with nuts (optional) and refrigerate till the chocolate hardens a bit.
