Really really LATE Birthday 3/12/11


WOW! It's been a long time, like, really long time. I've been trying to get my Etsy shop up and just been busy doing other things that I have neglected this blog. I'm sorry :-(

I have been meaning to post the cake I made for the kids birthday. Yah, I know, their birthday was 2 months ago. I really am sorry :-( <------ see sad face. I made 2 of the same cake but different flavor. I made chocolate and vanilla. I've had this jumbo cupcake pan from wilton and I've only used it 1 time for a graduation. I wasn't going to make a cake coz I wasn't feeling well but my Mom, yes my Mom, made me. LOL! So, I did :-)

Barbie cake for Twins 6/15/10

Izzy and Rizzy are twin girl who were born in the Philippines, but they are American girls. They were born on July 12, Philippine Independence Day. They live here in the US and when their mom, my cousin, asked me to make them a cake I was really excited. I promised them last time I would make their cake, since I didn't get to make it when they asked me before.

I had to make 2 cakes for twins but I didn't want to make 2 separate cakes. My cousin, bought 2 Barbie dolls and I figured I would make a huge round cake and just sit both of them on top. It actually turned out pretty good. I thought it wouldn't fit.

When I was towards the end, I was not so happy with the results. I ran out of MMF at 10 at night and with 2 kids in the house with no vehicle, I was not happy at all. I was frustrated that the twins wouldn't have a lot of color in their cake and they wouldn't like it. BOY, I was wrong! When they saw the cake the next day they couldn't stop looking at it. They were so excited and happy. Just seeing them happy made me happy :-)

I have to make cupcakes so they both have their own color. I messed up one of the cupcake color. I thought it was going to come out pink but it came out reddish (need to buy pink color). The colors the twins like are purple, pink and green.

Polka dotted Dino 4/22/10


Since I've been slowing down on my post lately, I have been digging my old pictures of the cakes and cupcakes I've made. I'm going to try to post them here until I get to baking new things again.

This one I made for my my BFF's daughter Bryanna. I got the idea from Betty Crocker kitchen. This was a super easy cake and it's fun to do if you have kids. In their site they use their cake mix form the box but I always use my own recipe.

I made some cupcakes as well.

The wafers are mint chocolate and the kisses are almond.

Happy Birthday Flo (Zebra pattern cake with pink)

6 months ago my cousin Flo and I were talking about cakes and she asked me if I could make her cake for her birthday. I was laughing because it won't be for another 6 months. She said, I'm just saying, you're making it, LOL!

6 months later it's time to make her the cake. We found one that was zebra pattern with pink stuff and she said that's the one. So I had to make a different version since I haven't made one with this pattern before. If you look at the picture the pattern is not as close as I wanted it to be, so the next one I'm making will be different.

Anyway, here's the cake and check out what happened to my hands. Don't play with red food gels. LOL!
You will need cake layers. You can use any cake you like. She wanted vanilla and I ended up making 3 (8" cake pan) with lots of domes, which I took off (just wait and see what I will do with the cake scrap).
Cover with buttercream frosting and make it smooth. Then wait 15 - 20 minutes for it to crust.
Grab a paper towel, use Viva if you don't want indentations on your cake or you can use wax paper like I did.

If you make something with red color make sure to wash your hands right away or you will end up with pink hands.
All done and ready for pick up. It turned good and I think she likes her cake, LOL! Actually, she might have forgot about her cake and was more into the Polvoron I made.


So the scrap??? I'm making a cherry cake balls dipped in chocolate right now and will post the outcome tomorrow :-)

Chocolate fudge layer cake


Ingredients:
1 pkg. (8 squares) BAKER'S Semi-Sweet Baking Chocolate, (SET ASIDE 3, THEN SAVE 5)
1 pkg. (2-layer size) chocolate cake mix
1 pkg. (4-serving size) JELL-O Chocolate Flavor Instant Pudding & Pie Filling
4 eggs
1 cup Sour Cream
1/2 cup oil
1/2 cup water
1 tub (8 oz.) frozen COOL WHIP
2 Tbsp. PLANTERS Sliced Almonds (OPTIONAL FOR GARNISH)

Directions:
PREHEAT oven to 350°F. Grease two 9-inch round baking pans. Chop 2 of the chocolate squares; set aside. Beat cake mix, dry pudding mix, eggs, sour cream, oil and water in large bowl with electric mixer on low speed just until moistened. Beat on medium speed 2 min. Stir in chopped chocolate. Spoon into prepared pans.

BAKE 30 to 35 min. or until wooden toothpick inserted in centers comes out clean. Cool in pans on wire racks 10 min. Loosen cakes from sides of pans. Invert onto racks; gently remove pans. Cool cakes completely.

PLACE frozen whipped topping and remaining 6 chocolate squares in microwaveable bowl. Microwave on HIGH 1-1/2 min. or until chocolate is completely melted and mixture is smooth, stirring after 1 min. Let stand 15 min. to thicken. Place one cake layer on serving plate; top with one-fourth of the chocolate mixture and second cake layer. Spread top and side with remaining chocolate mixture. Garnish with almonds. Store leftovers in refrigerator.

Mickey Mouse Cake for Baby Cole

I looked all over the place for this Mickey Cake pan. I searched Ebay and they had it but it was more that what I wanted to pay. I looked in amazon and couldn't find one that was my price range either. So, finally I googled for "Mickey Mouse pan craigslist" and this was one of them that showed up. It was only $10 plus shipping, which is still cheaper than the one I found in Ebay for $40 bucks plus shipping. The lady that was selling was from California and she asked me if I felt comfortable sending her the payment in cash and she asked for my address. I asked her if she had paypal. Before you know it she emails me back and told me that she had shipped the item and just to wait for it and pay her when it arrives. Wow!!! She's super nice too.

Then the cake I made (below). As you can see or if you even notice that the left side frosting had a little melt down, LOL! It got really hot here in the house, it’s summer time here, while I was frosting it and it started to melt. BUt it did stop, phew!!! Anyway, my hands are killing me from doing those stars on the cake but I'm pretty sure Cole's family will love it.

My very first Birthday cake for my kids

I envy those people who can just sit and start their blogs with no problems. Me on the other hand, sits here and thinks on what to write first. So if you notice most of my blogs that I have starts with this sort of intro, LOL!



Anyway, our kids birthday was planned late and I didn't think I was baking a cake. Their Nana and Lolo always get the cake for them as a birthday present so it's one less thing I have to worry about. BUT, his year was a bit different :-) they both decided that they wanted cakes, separate, so they can both have their own designs and they want ME to make it for them. So 4 days before their birthdays I had to google Kung Fu Panda and Pirate cakes. Good thing I found some that were easy enough to make and they both liked it. Gus wanted Kung Fu Panda and Lex wanted the pirate.
I was having a little bit of freak out though, I know I can do it but there is always that little voice in the back of your head saying. Are you really sure you want to do this? Grrrr!



The party was for Saturday and I was not even ready for anything. I don't have all the kids stuff for the party and I haven't even had the chance to get my groceries yet and it's Friday already and tomorrow is the party. It's about 11 in the morning and I had to run to the store and get everything I needed, quickly, come back home and then bake 2 kinds of cake. Chocolate for gus and Strawberry for Lex, 2 cake rounds total. I also had to clean the house, make dinner, do laundry and try to frost the cake. Which I never had the chance to do. I had to get up Saturday morning (party day) and started early with the cake. I must have been really in the zone 'coz I finished both cakes in 2 hours. The party turned out well everyone loved the cake.
