Mini peach cobbler 8/14/10


I would have to say, even though I love to bake, I'm not into sweets. I don't like cookies or cakes, but I sure love making them. I also enjoy peoples faces when they bite into the baked goods I make for them.

The other day I made some mini peach cobbler. I called them mini since they are baked in individual ramekins.

I actually liked it, it was tarty and not too sweet.

I saw this at Michael's a while ago and I never had the chance to post it here, till now. I've been so busy lately, specially on weekends. It's crazy when you have tons of families that have parties almost every week during the summer time.

Now, I finally have time to post, with the kids gone for while and no one here but me. I can finally do some blogging, ahhh!!!

Dinosaur BBQ Honey Hush Corn Bread (Recipe) 7/22/10

(This is the Dino BBQ's corn bread)

Every time I hear Dinosaur BBQ my mouth waters (drool), just kidding. My mouth is watering right now just talking about it, well typing. We don't go there a lot but when we get the chance I chow down. Their meal always comes with this piping hot corn bread but I never really tasted it. I usually just eat what I have and give the corn bread away.


The last time we went we got some to go and the very top of the bag was the corn bread and it smelled so sweet, even hubby asked for a slice. It was way too hot and I said no. 5 minutes later I couldn't help myself so I grabbed one and it was heaven. It was just perfect, moist and not too sweet. Then I remembered I have their cookbook at home, and knew I had to make one.

I made one and it was good while it's hot but it gets way too crumbly and dry out when it sits for a day. I might have to tweak the recipe and see what I can change.

(This is my corn bread)

So here's the recipe, right out from the book. Hope you make one and let me know how it turns out. This recipe makes 9 square servings.

Ingredients:
  • 1 1/4 cups yellow cornmeal

  • 1/4 cup sugar

  • 3/4 cup flour

  • 1 1/2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1 teaspoon kosher salt

  • 1 cup buttermilk

  • 2 eggs, slightly beaten

  • 1/2 teaspoon vanilla

  • 1/4 cup melted butter

  • 2 tablespoons honey

Instruction:
  1. Set the oven at 350 degrees F, Grease an 8 by 8-inch baking pan with shortening. Pop the pan in the oven to heat while you're mixing up the corn bread.


  2. Mix the cornmeal, sugar, flour, baking powder, baking soda, and salt in a bowl.


  3. Whisk together the buttermilk, eggs, vanilla, and melted butter in another bowl. Pour the wet ingredients into the dry and give them a good stir, just til everything is moistened. Pull the hot greased pan from the oven and pour in the batter.


  4. Bake for 25 to 30 minutes, or til a toothpick inserted in the middle comes out clean. Take the corn bread out of the oven and brush the top with honey.


  5. Cool for 10 minutes in the pan before cutting into squares.

Congratulation Class of 2010 7/18/10

Made the blue cake for my cousin who graduated from High School this summer. Their school color is blue so I made the cake decor blue, but she is also going to RIT and their school color is orange and brown. The only thing is that brown doesn't look too good with blue, but orange does. The cake is plain since I forgot to place the grad statue thingy on top, I did get a picture of it before the cake was all eaten. I'm glad they liked it and they said it was really good.

I also made a cake for my hubby's cousin who also graduated high school. He has his grad party the week after I made the cake above and they asked me to make it for him. This is our graduation present for him.

It's a square cake 9x9 vanilla cake, with strawberry jam filling and buttercream frosting.
I also made 50 cupcakes with buttercream frosting. School color is purple and gold.

Perfect for summer Mango Supreme Float 7/14/10


I love it when families that cook and bake comes to visit. My family in particular, they bring food with them when they travel and visit. I'm not talking chips and little mini snacks. I'm talking big coolers full of dishes and desserts, LOL! So when my Aunt and Uncle came to visit from NYC, I knew that they have some goodies with them, and I was right. They brought everything but the kitchen sink.

They brought some adobo, bakang me sabaw , cheding's peanut, super yummy yummy Mango supreme float and I there was so much more. I bet she could have fed an army with all the food she brought.

The best one was the Supreme Mango Float that she made. I completely forgot to ask for the recipe, but I will get it. Soon!
